Quarter Beef

Ordering a Quarter beef share means you are splitting a Half beef with someone else. Each of you will get a portion of the front quarter and each of you will get a portion of the hind quarter. Our Quarter Share boxes are all the same, ensuring that each party receives equal value in total lbs of meat and an equal variety of cuts. Eighth Beef shares an ~62 mix of the below.

What you will receive in your ~124lb Quarter Beef mix:

  • 40% of your order in 1 lb packages of Ground Beef (+/- 50 lbs)

  • Ribeye Steaks (1” thick steaks - approximately 6 steaks two per package)

  • T-Bone Steaks: Bone-in Tenderloin & New York Steaks (1” thick steaks- approximately 6 steaks two per package ) 

  • 1 Filet Mignon

  • 4 Chuck Roasts (ideal for slow cooking for tender rich pot roast recipes) 

  • 1 Sirloin Tip Roast

  • 2 London Broils

  • 2 Top Sirloin Steaks (1” thick steaks individually wrapped)

  • Eye of Round tenderized as Cube Steaks

  • 1 Rump Roast

  • Brisket (Point or Flat)

  • Tri-Tip or Flank Steak - luck of the draw!

  • Skirt Steak

  • Short Ribs

  • Heart & Liver

  • Stew Meat

  • Soup Bones

  • Shanks (cross cut meaty Marrow Bones - used for Osso Buco)

* Oxtail & Tongue are sometimes available for Quarter shares upon request. Every animal only has one tongue and one tail and they aren’t big enough to split, but every once and awhile a Half or Whole share customer will offer theirs to someone else - please send us an email if you would like to be on the waitlist.
